Helping the clientoutline an indicative menu in line with theirconcept, thoughts and ideas, after a briefing.
Plan and present an inspirational menu that reflects the client’s concepts, themes and ideology.
Develop a complete range of recipes in line with the proposed inspirational menu.
Food tasting and trials to help finalise the recipes for the chosen menu.
Selection of recipes to go on the Final Menu, based on refinements suggested to the initial design.
Upon formal approval and finalisation, recipes and menu will be finalised and crockery and cutlery items selected for the planned concept.
Feedback on the presentation, taste and texture of the recipe items developed will be recorded and incorporated to standardise each recipe for Menu Training Sessions.
All efforts will be made to suit the client’s tastes and requirements as a priority. ICCA Abu Dhabi’s Professional Chefs will also share their technical expertise about maintaining product authenticity and standards throughout this process.
ICCA will help develop Standard Recipe Cards (SRC) for the chosen menu and recipes that have been finally approved.
The SRC will include the Name of the Dish, Method of Preparation, List of Ingredients, Food Costing Details, Tips, etc.
ICCA’s photographers will also prepare a Standard Product Picture of the final presentation of each recipe item arranged on the chosen crockery and cutlery (where available and applicable).
The final SRCs with Standard Pictures will be provided in PDF format.
Recipe Execution Videos (Optional): A comprehensive step-by-step video illustration of each recipe’s execution can be provided if requested for operations standardisation. Note: This is an optional service and will incur extra costs if requested.
The client may choose to get their restaurant layout designed either by ICCA's in-house team or by an external agency/consultant.
ICCA will exhaustively execute the entire menu as planned during extensive menu training sessions for the restaurant personnel.
ICCA Abu Dhabi’s Professional Chefs will demonstrate each item on the menu in a hands-on manner for all the trainees to provide a thorough theoretical and practical understanding of the recipes.
Client personnel will be provided with a full-day (eight hours) session on all Standard Operating Procedures (SOPs) for the restaurant.
Upon completion of the training, a comprehensive SOP and Recipe Manual will be handed over to the client by ICCA in PDF format.
